Well it is cold outside and my way of cooking during the colder weather changes with the weather. I tend to want more hearty meals and occasionally includes a homemade soup now and again. Here is a recipe for one of my very favorite soups and I hope you give it a try because it is a KEEPER! It is filling and easy to boot so give it a try and let me know how you like it!
POTATO SOUP
4 cups chicken stock
2 1/2 cups milk
1 1/2 cups 1/2 & 1/2
1 medium onion, diced
1 cup celery, diced
1/2 cup butter
1/2 cup flour
1 tsp salt
1/2 tsp pepper
2 lbs potatoes, peeled and diced (I cheat and use 2 15oz+ cans of diced potatoes)
Cook the potatoes in the chicken stock until soft. (Canned potatoes are already soft so there is no reason to wait to continue.)
In a separate pan melt butter and add onion and celery and cook until soft then add a small amount of the chicken stock to this mixture. Add flour slowly until the mixture is thick and smooth.
Add this combination to the potatoes in the hot stock stirring continuously.
Slowly add milk and seasonings, half and half and heat until hot...but do not boil!
Add crackers and enjoy!
